Рецепт сочной индейки, приготовленной в духовке

Для блюда возьмем: индейку весом 5,5 кг, 3 лука, 3 морковки, 2 лавровых листа, по 10 шт. каждого перца (белого, зеленого, розового, душистого), 1 ч. л. сушеного тимьяна, 1 ч. л. сушеного шалфея, 220 гр. соли, 140 гр. сахара, 5 л воды.
Для начинки: 2 апельсина, 1 мандаринка, 1 яблоко, 0,5 айвы, 1 луковица, тимьян, розмарин.
Вначале приготовим овощной бульон. Для этого в кипящую воду выложим очищенный лук и морковь. Варим на небольшом огне полчаса. После этого добавим в бульон смесь перцев, тимьян, шалфей, соль, сахар и лавровые листья. Доводим до кипения, варим 5 мин. Затем достаем овощи и остужаем бульон до комнатной температуры.
Индейку промоем, просушим, делаем проколы обычным шприцом , чтобы она хорошо просолилась. Теперь переложим ее в глубокую емкость, заливаем остывшим бульоном и оставляем на 12 ч , периодически разворачиваем тушку другой стороной.
По истечению времени хорошо промоем ее холодной водой.
Готовим начинку. Лук чистим, разрезаем на 4 части. Мандарин чистим, в него вставим веточку свежего розмарина. Кусок айвы разрежем пополам, а яблоко на 4 части. В апельсины так же вставляем розмарин.
Теперь всем этим наполним индейку + 2 веточки свежего тимьяна. Далее переложим тушку на противень, связываем ножки. Затем смажем ее растительным маслом, накроем фольгой.
Ставим в подогретую духовку до 180 градусов на 2,5-3 ч. После этого достаем из духовки, снимаем фольгу, но накрываем ножки и крылья, поливаем соком и готовим еще 40 мин.
Затем снимаем фольгу и запекаем еще 20 мин.
