Салат Оливье – русский или французский рецепт?

В начале двадцатого века само слово салат было малознакомым, домашние хозяйки готовили его, если интересовались рецептами французской кухни. Сначала компонентами этих блюд были листовые салаты, травы с огородов, сырые овощи. Само понятие салата означает блюдо из тонко нарезанных овощей, мясных или рыбных изделий, яиц, грибов, фруктов в холодном виде.
Для нашей быстротекущей жизни желательны рецепты быстрого приготовления, на скорую руку, с доступными продуктами. Но это в будние дни, наши праздничные застолья не обходятся без традиционных рецептов, в первую очередь, на ум приходит салат «Оливье» . Мы считаем его французским, парижские кулинары называют его русским или картофельным. Авторство салата «Оливье» принадлежит французскому повару Люсьену Оливье, работавшему в московском трактире «Эрмитаж» . Блюда, которые этот шеф-повар готовил, отличались особым вкусом и шиком. Салат «Оливье» из рук автора был произведением кулинарного искусства и прославил его имя на века. После смерти шеф-повара, секрет приготовления салата, его вкусовая изюминка были утеряны.
С той поры, мировые гурманы признают, что все попытки воссоздания рецепта не достигли авторского вкуса. Современные салаты «Оливье» уже не содержат рябчиков или телячий язык и заправляются обычным майонезом, а не соусом авторского приготовления. Известен рецепт «Оливье» с креветками, в который входят такие продукты, как авокадо, огурцы, морковь, вареные яйца, орехи кешью. Заправкой для него служит оливковое масло, смешанное с белым винным уксусом, соком лимона, и приправленное перцем, чесноком и морской солью.
Современные домашние хозяйки обогащают перечни своих рецептов блюд по-разному: обмениваясь ими с подругами, читая различные книги или журналы по кулинарии.
