Вкусный рецепт диетического салата с рисом и помидорами

Чтобы приготовить такой салатик возьмите: ½ стакана риса, 4 помидора небольшого размера, 1 репчатый лук, ½ лимона, несколько веточек петрушки, несколько веточек укропа, 2 столовые ложки растительного масла, соль, черный молотый перец.

Репчатый лук чистим от шелухи, нарезаем тонкими полукольцами, перекладываем в пиалу и заливаем кипятком. Отставляем в сторону на 3-4 минуты, после сливаем горячую воду и промываем хорошо лук холодной водой. Делаем это для того, чтобы лишняя горечь вышла.

Рис необходимо тщательно промыть в нескольких водах. Затем варим его до готовности в большом количестве подсоленной воды. Далее откидываем рис на дуршлаг, промываем и оставляем на несколько минут, чтобы лишняя жидкость стекла. Он должен получиться рассыпчатым.

Помидоры промоем, просушим и нарежем кубиками небольшого размера.

Веточки зелени петрушки и укропа хорошо промоем в воде, обсушим и мелко порежем.

Переходим к сборке салата. В салатницу выкладываем рис, помидоры, измельченную петрушку и зелень, полукольца лука. После этого добавим немного соли, черного молотого перца, растительное масло.

Теперь сбрызгиваем его лимонным соком. Далее хорошо перемешиваем.

Подаем салатик порционно, украшаем ломтиками лимона.
