Свиные рёбрышки в пиве. Вкуснее, чем в ресторане

ИНГРЕДИЕНТЫ:
В кипящую подсоленную воду кладем свиные ребра, лавровый лист, черный и душистый перец и варим 4-5 минут, полной готовности нам не надо. Откидываем ребра на дуршлаг, они должны полностью обсохнуть. Желательно, чтобы свинья была не самого спортивного телосложения и умирала не своей смертью, мягкие хрящики категорически приветствуются. Пока ребра сохнут, режем чеснок и перец, можно не мельчить. 200 мл пива для маринада, остальное – в берестяную кружку (спасибо Великому Новгороду и тестю за такой подарок). Перец лучше продегустировать на остроту, иначе ребра будут сладкими, но не острыми, чего нам не надо.
В пиво добавляем 3 ст. л. меда, чеснок, перец, 10 г соевого соуса, черный перец крупного помола, смесь душистых трав (если будет в смеси розмарин – замечательно). Перемешиваем до полного растворения меда. Есть время приготовить маринад заранее – мед успеет раствориться сам. Маринад получается ОООЧЕНЬ душистый. На раскаленной сковороде с малым количеством оливкового (растительного) масла обжариваем ребра до золотистой корочки, глотаем слюни, сливаем вытопившийся жир (мы ж заботимся о калориях, ага).
Не убавляя огня (или электричества), выливаем маринад на сковороду. Пока все это 10-12 минут адово кипит и выпаривается, налить в кружку еще пива и подпереть спиной дверь в кухню, на стуки извне не обращать внимания. Через 10-12 минут, когда маринад густо забулькает и карамелизуется, убавить огонь до среднего, и еще 3-4 минуты активно переворачивать ребра, со всех сторон макая в соус. Выкладываем на тарелку, сверху поливаем соусом со сковороды. Гарнир – на свой вкус.
