Рецепт воздушного торта «Белочка»

Корж: 4 яйца, 250 гр. сахара, 200 гр. изюма, 250 мл молока, 20 гр. разрыхлителя, 260 гр. муки.

Крем: 400 мл сливок 33%, 250 гр. сгущенки, 200 гр. фундука.

Изюм промываем в теплой воде. Далее измельчаем его блендером.  Яйца делим на белки и желтки. Белки взбиваем с половиной сахара до устойчивых пиков.

В отдельной посуде взбиваем желтки с оставшимся сахаром 2 мин. Далее в полученную смесь вводим молоко, постоянно перемешиваем миксером. Затем в молочно-желтковую смесь перекладываем изюм, размешиваем миксером.

Муку перемешиваем с разрыхлителем. Затем на миксере меняем насадку на крюки. Муку вводим в желтки с молоком, перемешаем миксером.

Далее в эту массу добавим в несколько этапов взбитые белки, аккуратно размешиваем лопаткой до однородности. Получившееся тесто делим пополам.

Форму для выпечки застилаем пергаментом и смазываем сливочным маслом, выливаем часть теста. Выпекаем при 180 градусах около получаса. Дальше выпекаем второй корж.

Фундук сушим в духовке, чистим от шелухи и измельчаем блендером. Охлажденные сливки взбиваем миксером до густоты около 4 мин. Затем к ним добавим сгущенку, взбиваем 2 мин.

Коржи режем пополам. Каждый корж промазываем кремом с двух сторон, посыпаем орехами и собираем торт. Бока и верх так же мажем кремом, посыпаем орехами. Пропитываем минимум 2 ч в холодильнике.
