Нежный десерт «Маркиза» – пальчики оближешь

Для бисквита нужно: 2 яйца, 115 гр. сахарной пудры, 25 гр. муки, 25 гр. какао.

Для крема возьмем: 600 мл сливок жирностью 33%, 260 гр. шоколада, 10 гр. желатина, 50 мл воды.

Начинаем готовить тесто. Белки отделим от желтков. Нам необходимо взбить белки миксером до белых пиков, постепенно высыпаем сахарную пудру.

В отдельной посуде взбиваем венчиком желтки с остатками сахарной пудры. Теперь к ним добавляем половину взбитых белков, перемешаем. После этого вводим просеянную муку и какао, аккуратно размешиваем. Затем добавим оставшиеся белки и еще раз перемешиваем.

Форму для выпечки смажем маслом, переливаем тесто, разравниваем его ровным слоем. Выпекаем бисквит при 180 градусах примерно 10-15 минут.

Дальше осторожно снимаем кольцо, охлаждаем корж. Съемное кольцо заворачиваем в пищевую пленку.

Готовим начинку. В отдельной посуде необходимо взбить миксером охлажденные сливки до образования пышной массы.

Желатин высыпаем в пиалу, заливаем небольшим количеством воды, оставляем набухать.

После того, как он набух, выложим его в миску, дольем еще воды и нагреем все на водяной бане, постоянно перемешиваем, пока не образуется однородная масса.

Растопленный шоколад смешиваем с желатином, перемешаем. Далее эту массу постепенно вливаем в сливки, размешиваем.

Кольцо в пленке одеваем на корж с дном формы. На него выложим начинку, уберем в холодильник на 3 часа. После этого снимаем кольцо, посыпаем какао.
