Для торта нужно: 6 яиц, 150 гр. сахара, 130 гр. муки, 20 гр. какао, 1 ч. л. разрыхлителя.
Для крема: 250 гр. сахара, 50 гр. сахарной пудры, 200 мл сливок 33%, 150 гр. сливочного масла, 1 лимон, 4 желтка.
Для пропитки: ½ ст. сахара, ½ ст. воды.
Для глазури: 100 гр. черного шоколада, 50 гр. сливок 10%.
Яйца разбиваем в чашу, взбиваем и постепенно добавляем сахар. Перестаем взбивать, когда получится пышная густая пена. Теперь вводим порционно просеянную муку, какао и разрыхлитель, перемешиваем.
Дно формы застилаем пергаментом, переливаем тесто. Выпекаем бисквит при 180 градусах 40 мин. Горячий бисквит ставим остывать на решетке вверх дном. Затем разрезаем его на 3 части.
С лимона снимаем цедру на мелкой терке, далее выдавливаем сок. 125 гр. сахара пересыпаем в сотейник, заливаем соком, на огне доводим до кипения.
Отделяем желтки от белков . В желтки высыпаем остатки сахара, взбиваем добела . Далее к ним вводим еще горячий сок с сахаром, перемешиваем. Переливаем смесь обратно в сотейник, варим до кипения, постоянно перемешиваем.
Сливочное масло взбиваем добела. В него порционно вводим остывший крем, размешиваем.
Холодные сливки взбиваем отдельно. Затем высыпаем сахарную пудру, продолжаем взбивать до устойчивых пиков. Теперь постепенно добавляем крем, лимонную цедру, размешиваем.
В сотейник высыпаем сахар, заливаем его водой, доводим до кипения и кипятим 1 мин.
Коржи пропитываем сиропом. Затем смазываем половиной крема, накрываем вторым коржом, промазываем оставшимся кремом. Накрываем торт и убираем в холод на 8 часов.
Шоколад со сливками топим в микроволновке, размешиваем. Далее поливаем им сверху торт.
Ставим в холод. После посыпаем сахарной пудрой.
